Our Story…

How it all started…

Chef Bruno Sosa’s passion for food started in 2002 when he realized that food was at the heart of some of his most cherished moments, and cooking became his favorite activity. Reproducing recipes, trying new foods, and seeing how ingredients worked together enticed  him to create his own recipes and pushed him to pursue a culinary arts career.

In 2005, he joined the Pan-American Academy of Culinary Arts, in El Salvador, and met his first mentors: Chef Daniel Leiva and Chef Carlos Pineda, who pushed him to explore diverse culinary types and ingredients.

Chef Bruno started to cater and opened his first business – Mr. Grill – the first Choripan food cart in El Salvador. He quickly learned that cooking was not just about the food but about bringing people together and creating emotions.

He moved to New York in 2015, where he had the opportunity to work in different restaurants and learn about other culinary styles – Korean, American, Peruvian, Mexican, and Italian.

In 2018, he joined the Mexican Gastronomy School in Mexico City where he met Chef Yuri DeGotari and the renowned Gastronomic Historian, Edmundo Escamilla. They both became his new mentors, exposing him to new flavors and teaching him how to create new entities by combining different ingredients or types of food.

Chef Bruno moved to Orlando in 2020 and started to cater again. Under his 503.LatinFusion brand, he opened his Food Truck in 2022. His mission: to bring the quality, taste, and presentation you would typically only get at a restaurant, to the streets and homes of Orlando.

Cooking is the first step, but taking people on an emotional journey through flavors is the goal.
